Augratin with Spinach, Artichokes, Beans And Vegan Grated Cheese

  • 300g Violife Grated original vegan cheese 
  • 2 artichoke hearts (sliced)
  • 1 onion (sliced)
  • 2 garlic cloves (sliced)
  • 2 cups spinach
  • ½ cup beans
  • ½ cup almond or coconut milk
  • Fresh dill (sliced)
  • Extra virgin olive oil
  • Salt and freshly ground pepper



In a large frying pan sauté in a medium heat the onion and the garlic cloves with a dash of olive oil.

Once coloured add the beans and the spinach and stir constantly.

Then add the artichokes, fresh dill, milk and Violife grated original vegan cheese. Continue stirring and season with salt and pepper.

Pour the mix into an ovenproof dish, and bake in a preheated oven at 200 οC for 15-20 minutes. Bingo!


Our Tip: You can substitute the artichoke for an aubergine (simply cook the aubergine beforehand) or even an avocado. You could also change dill to other herbs like flat leaf parsley or basil. And for you chilli lovers, we suggest you add a small amount of your favourite red chilli for an extra kick.
